By easy, I mean you can find vegan food without too much hassle or commuting.

I'll start the list with Thailand. In Chiang Mai in particular, there was vegan food everywhere. Bangkok was pretty good too. Outside of the larger cities isn't too bad if you learn how to say a few things. Southern Thailand was definitely the worst for vegans in Thailand, with the exception of the vegan resort.

I had a pretty easy time in Japan as a vegan, and had SO MUCH great food. All I had to do was make certain that people at restaurants knew what vegan meant. Otherwise, shopping for vegan food myself was easy! There were even edible real foods to be found in stores such as 7-11, and Japanese food in general is nearly vegan anyway.

Um be careful in the republic of Ireland. Even the potato chips have milk in them. I took a tour they said they could feed me vegan and instead I got fruit for breakfast and greens with no salad dressing for 10 days. However in Belfast (northern Ireland) there was no problem.
